4, as needed, lean center-cut pork chops, 1/2-inch thick
1 Cup all purpose flour
1 egg
1 tsp skim milk
1 Cup dry bread crumbs
1 tsp paprika
1 tsp oregano
1 tsp garlic powder
1 tsp black pepper
1/2 tsp salt
nonstick spray coating (olive oil preferred)
Steps:
Trim fat from chops and pat dry with paper towels.
Arrange 3 bowls for breading, containing:
1) Flour
2) Lightly beaten egg and skim milk.
3) Bread crumbs and seasonings.
Spray a 9xl3-inch baking pan with nonstick spray coating. Heat oven to 375 F.
Bread chops, 1 at a time by; coating thoroughly with flour (shake off extra);
Dipping in egg mixture; and coating thoroughly with bread crumb and seasoning mixture (may press breading into chops).
Place chops in pan and bake in 375 F oven for 30 minutes. Turn chops and bake 15 minutes longer.
Note: Works well for chicken and fish with cooking time adjusted accordingly.
Serve with mashed potatoes, pressure cooked green beans, and applesauce.
